Redefining value

Don’t be a sheep.
Be a peacock.

Busier tills, thinner margins. Higher prices, lower value. Bakeries serving better coffee, coffee shops competing on food. The UK coffee market has never been more contradictory. The middle got squeezed from both ends, and the best of it fought back.

Redefining value is now at the epicentre of every successful coffee and hospitality business in the UK. The UK Coffee Leader Summit + COHO Expo gives you the right offline environment to meet the right people, in the right state of mind, and to build the partnerships that set you apart from the flock.

The flock

A market that stopped making sense.

At the start of 2026, UK mid-market operators got squeezed by affordable and high-end competitors. The numbers contradict each other:

Busier tills. Thinner margins.

81% of operators grew sales, yet only 37% describe trading as positive, as VAT and business rates take a bigger share of every sale.

Higher prices. Lower value.

Higher prices should come with more quality. The average latte rose to £3.76, yet 38% of consumers say coffee shops don’t offer good value.

The biggest branded coffee chain in the UK is now a bakery.

Greggs has more outlets than Costa.

The middle that followed the flock got squeezed. The middle that fought back thrived.

The peacock

Redefining value.

The peacock is not necessarily premium but it is always distinctive. The mid-market operators that fought back traded on signature menus, stopped choosing between opposites and owned both sides of them.

Cheaper and better

Value operators now trade on quality, not just price.

Indulgence and restraint.

Consumers will pay a fortune for a unique treat, and they reward outstanding value just as loudly.

Signature and automated.

Matcha and plant-based drinks now come from automated machines, so signature menus scale without the queue.

Familiar brands, new formats.

Starbucks is launching premium doughnuts. Costa is installing in-store bakeries.

Convenience and craft.

Specialty coffee quality is no longer the exception; it is the expectation.

Coffee and not coffee.

Matcha-led menus, iced drinks and signature beverages now sit almost on par with coffee.

Less caffeine, more function.

Gen Z buys into optimisation and lifestyle, not craft and purism.

Value is no longer a price point. Tomorrow’s winners will redefine value on their own terms.

The room

Where value gets redefined.

No operator redefines value alone. The UK Coffee Leader Summit + COHO Expo brings the operators raising the bar together with the suppliers who hold the turnkey solutions: the products, formats and programmes that turn a contradiction into a competitive edge.

It is the right offline environment to meet the right people, in the right state of mind. It is where partnerships are built, not flocks.
